The local mom-and-pop pizza place does similarly, except that they
have a firebrick oven they slide the pizza into. They put some coarse
cornmeal on the peel to keep the raw dough from sticking. These people
don't roll out the dough, they do the toss-it-in-the-air-spinning trick
to get it round.
That is the _proper_ way to do things.
Gawd, now I'm starving. I wonder if I can find a good pizza place
within walking distance of my hotel here in Tokyo.
Possibly, but the topping choices might strike you as strange... squid, corn, mayo, scallops[1]....
When we were in Japan, we often got pizza from an outfit that delivered and sold pizza and ice cream of all things. There was an Italian outfit in the train station that was quite good, a real Italian place downtown that was quite good and an Austrian place that made a pretty good pizza that we frequented until the day the proprietor was passing out free deserts.[2]
[1] The last one, it turns out become my wife's favorite.
