You can use a 3rd party boot manager, or you can start the Vista install from within XP (there are other ways to start the Vista install, but starting from within XP insures that Vista properly assigns drive letters so that all drives have the same letter under both XP and Vista).

One issue, XP and Vista are incompatible with each other, and if you let the Vista and XP drives see each other, they will both destroy the other OS' system restore points. There is no way around this but to totally and forever keep the Vista drive from seeing the XP drive and vice-versa (disabling system restore does not fix the problem), and keeping each from seeing the other drive is not always easy to do without a lot of messing around when switching back and forth between the two OS'. Microsoft actually recommends that XP and Vista not be installed dual boot at all.

You can use the "settings and file transfer wizard" to export your XP settings to a file, then import this file into Vista. Vista also has it's own settings wizard.

Applications have to be installed separately for each OS. That means that you have to install Photoshop under XP, and then do a totally separate 2nd install under Vista. And the real problem is that thanks to Product Activation, you may actually have to BUY two separate copies of some applications to do this.

What happens when in Vista and I click on a program installed in Xp... Photoshop.exe for example
