Rose -- And just how much coffee did YOU have this morning? LOL I know
exactly how you feel about cooking. I LOVE to cook and no, it's not a
chore. I especially like to bake having to be careful because my
husband and son are not big sweet eaters and well, I am, and that can
become dangerous. When my son was in high school I followed Dave
Thomas' philosophy when he said, "If you make it they will come" or
something like that. I wanted the kids at my house so I baked weekly,
letting the kids know what was next on the menu. After the first year,
they started having their favorites and would ask, "Mrs. Witt when are
you making .....again" So I would make their favorite for their
birthday. I was so surprised to learn how many of them didn't have
Mom's who baked --EVER ! I mean not even a box cake or brownies. So
then of course they would want to take some home with them and then I
would start baking in twos! I was in heaven. Got to bake and give it
away so I didn't get too fat! Every Christmas I would make about 90 -
100 dozen cookies and on Christmas Eve all the kids knew to come over.
This was the first year I didn't bake having been in the hospital for 3
weeks before Christmas. And the first time in 16 years I didn't have my
Christmas Eve party. I've been threatening not to have Christmas Eve
the past few years and the kids were all oh you can't ... it's
tradition! This year, on the 29th of Dec, 5 of them came to visit me
for my birthday and one even bought cookie dough cause he knew how much
I had missed baking this year. Never mind it was slice and bake....his
sentiment was in the right place. My husband and son were on a cruise
that my doctors forbid me from going on and the kids said they didn't
want me to be alone on my birthday. Freshman in college at that home
on break and they come to visit me! Some visited me in the hospital
too. Never mind it was at 1 am! LOL The concert was over! LOL They
are such a great group of kids I really do miss my baking. And my
cooking. And I take a lot more shortcuts these days also. My husband
doesn't trust me with knives since things tend to fly out of my hands
sometimes. No one wants to sit across from me at the table since the
time my fork flew across the table. Thank goodness that wasn't a knife!
I haven't been able to get him to stop cutting my meat ever since that
happened. Well my son hasn't tried the lasagna out on his roommates yet
--Just the one he made with me when he helped me a few weeks ago. We
made two, naturally, freezing one and he took it with him to spring
break. Apparently I was made an honorary Italian! LOL

About that Energy Conservation Training -- where did you do that? I
haven't heard of that. The only thing I did was a memory course that
helped me learn some things to do that make remembering things easier
When I was first dx with MS I was having an awful time with short term
memory. My memory is still bad but the tricks help. I think it's drug
related.

My kitchen is not very accessible for me. We are going to have it
redone this year. I don't really know what I'm going to include other
than a surface that is easy to do food prep on from a wheelchair and
drawers instead of cabinets with shelves. Time for research. And we
have to do two bathrooms also, which need to come first for safety
sake. Not looking forward to having the house torn up. I'm thinking
I'll do the second bath first because it's the one my husband uses.
That way when they tear up the master bath which is going to take more
work, I'll have a bathroom and shower I can use. Then the master. Then
the kitchen. I've heard nightmares of kitchen remodels. How long it
takes, the dust etc. Not lookin forward to the process but definately
to the final project whatever it will be.

OK - Gonna go take a rest. Showered this morning and I need to get my
legs up to get the swelling out and put my stockings on. Oh joy. Enjoy
your manicotti! And no, it's ot conceited to look forward to our own
cooking.
