Didn't check. I guess the fat in the ice cream acts as a buffer,
slowing sugar absorption rate.
Since I have trouble with oatmeal (drives up bg), I was thinking of
eating oatmeal with a hard boiled egg. Would the fat from the egg
slow down absorption rate of oatmeal carbs?

It could but I don't think of eggs as being overly fatty. You might do
better if you added butter. Also keep in mind that oatmeal contains fiber
so is digested more slowly. Ice cream would be digested more quickly. So
it is possible that you have a spike early on.
