For post-prandial insulin resistance to even be tested means the meal

The study kept carbs intentionally low at 22% of calories so it wasn't
a low as you like but it was still low.

Also all high fat diets (with or without carbs) will always increased
postprandial TG. This is well know and established. That's why TG
levels are tested fasted, so levels won't be influenced by post
prandial results.

Your low carb diet also included a significant weight loss (always
improved lipids) and a statin. Those are 2 huge confounders.

The only long term low carb diet study (<20 carbs day for a year) that
I know of found decreased blood vessell health. The longer the diet
went on, the worse the results. This has been posted on ASD an number
of times.
