pushing my BG over 140 is lasagne which is cooked al dente, has plenty
of meat and fats in it, no sugar in the sauce, and is not enough to be
a main course in itself, so has something BG benign like broccoli
added to bulk it up to a meal. My suspicion is that lasagne works
because it ends up in my gut in larger pieces, and therefore takes
longer to digest, just enough longer for my remaining insulin capacity
to mop up the BG before it gets too high."
One might suspect it acts like the pizza effect as it has similar
contents.
One might find over 140 but delayed and persisting for a longer time.
More checks to nail down if this is happening and how much longer and
for how long might be warrented.
The size of the pasta should have little effect. Once it leaves the
stomach all pasta will be a mush like result and close to being glucose.
Did you as a child do the test where you keep a cracker in the mouth and
see how it becomes sweet to the taste? This process starts in the mouth
and by the small gut is ready to be quickly absorbed..
