I won't want go lower on the TC number.

I'm not a big fan of dairy fat and am cutting back on cheese intake.  In
the last 3 months or so I've been getting more red meat into my diet
... more from inattention than from design.  That's what I was referring to.

I am a fan of diary fat in the context of other fats
but less so for the dairy protein and milk sugar.

I'm similar.

I use cream, cheese and butter daily and yoghurt often but I use very
little milk. The little I use is whole milk, not skim or reduced
cream.

That may be part of the reason for my high LDL or not. It seems to
have little effect on my other lipids including the apolipoproteins.

I also consume some sour cream though I have make sure
to read the label as some brands or even certain runs
of some brands have added starch as thickner.
