It takes very little C to prevent deficiency disease.
Preventing a deficiency disease or symptom isn't enough to promote good health from the nutrients we ingest. Vitamin C, just for example is *one* of the most important vitamins there is especially for keeping the mitochondria healthy (by way of synthesising carnitine) and is protective of many of the essential molecules needed for proper metabolism of proteins, fats and carbs.
Eating just enough to prevent scurvy is nowhere near enough to protect from CVD and other insidious disorders, especially in a diabetic.
We also don't know if Michael is a smoker (or subjected to second hand smoke) or a stress-head. We don't know if he takes supplements like fish oil, Vitamin D etc etc. He sure does look like he is deficient in calcium intake.
I would like to see what Michael eats most days other than lettuces, meat, yoghurt...
You have my diet above except for eggs. I have never smoked, unless you count two cigarettes. Both made me vomit. That was enough smoking for me. I do not feel stressed until I am waiting for my meter to count down to the reading.
I eat fish oil capsules. 5000 mg per day. I am not subject to second hand smoke. My wife makes drawings on me with felt pens. This really really relaxes me. This has been a tradition for the last 43 years.
So, I think I am getting the nutrients I need while holding down my BG. I would like to eat a piece of fruit now and then but I am still deciding about metformin.

It is always my aim to promote good health by maximising the nutrients I ingest while maintaining good bg control. Other people might have different priorities but I base my entire diet around providing enough necessary nutrients (from a wide variety of foods) and calories to have optimal intake. That means I research every food item promoted as nutrient rich that could have a specific place in my diet as a diabetic and menopausal woman in her 50's. I personally don't believe in empty calories for 99% of the time (birthday cake doesn't count :) ). If I ever had to eat a diet that was sub clinically healthy (re bg control) at best then I would opt for meds.
So far, after 10 years post diagnosis, I can happily say that I am eating optimally without meds. I have even found a happy balance with oatmeal (added oat bran, applesauce and skim milk) that doesn't cause a bg rise, provided it is eaten late in the afternoon and not right before bed. Plus its more than 1 bite's worth.
I have spent 36 years of my life researching vitamins, minerals etc and I can honestly say, Michael's diet, as it appears is sub clinically deficient. That's why I hope he can expand on this so I can see what he really eats.
