My BIL always liked skinless tomatoes on crackers so he would dip a
tomato in boiling water and let it stand for a few seconds then whip
it out. It still peeled very easily but kept that fresh, raw taste
of tomatoes that he likes.
That's what I used to do when I canned tomatoes.
I tend to eat canned tomatoes more than fresh these days becasue of the
extra lycopene in cooked tomatoes. I also use more tomato paste these days
for the same reason. Cooked up with a bit of olive oil and it is the perfect
antioxidant.
