bruise healing,swelling in lower legs, etc-all lessened by losing
weight, which is now at my ideal weight, yet I still have neuropathy-the
thirst and hunger have decreased). What say you?

I say leave out the rice and beans, add more chicken and celery, go easy
on the onions and carrots. Chicken and most veggies won't kick up your
neuropathy, but beans, rice and cooked carrots sure will.

+1, nothing to do with *cooking* the food.

Well... It could, when it comes to vegetables because they do cook down.
In general, 1/2 cup of cooked vegetables has the same carb count as 1 cup of
raw ones.
