I have discovered that I can no longer eat home made chicken vegetable
soup, one of my favorite foods. When I do the neuropathy in my feet
kicks in immediately and does not disappear for a hour or more. This is
home made soup, one leg of chicken as much fat removed as
possible, small amount of beans, small amount of rice, rest veggies, no
salt. I think this has something to do with cooking the food and
thereby
making it more glycemic. Some doctors here advocate a raw food diet
saying that cooking destroys enzymes that aid in digestion. I am
starting to think they are right. I can no longer eat this soup. I have
similar problems with straight rice, but in much larger quantities and I
have no similar problems with veggie salads and chicken separately. So,
I'm thinking it must be the cooking doing this. BTW, I have not yet been
diagnosed with diabetes and my bg test levels
do not indicated diabetes, but are high normal (upper 5's). But if it
walks like duck and looks like a duck it is a duck (I have most of the
symptoms of diabetes, excessive hunger and thirst, neuropathy, slow
bruise healing, swelling in lower legs, etc-all lessened by losing
weight, which is now at my ideal weight, yet I still have neuropathy-the
thirst and hunger have decreased). What say you?
I say leave out the rice and beans, add more chicken and celery, go easy
on the onions and carrots. Chicken and most veggies won't kick up your
neuropathy, but beans, rice and cooked carrots sure will.

+1, nothing to do with *cooking* the food.
Well... It could, when it comes to vegetables because they do cook down.
In general, 1/2 cup of cooked vegetables has the same carb count as 1 cup of
raw ones.
