Spot on Quentin!

This paper makes no claim that saturated fats are healthier from any
source,grass fed or not. In fact the paper acknowledges that saturated
fats should be reduced and is one of the advantages of grass fed
derived cheeses.

"fats consumed in cheese are, of course, a matter of concern; again,
alpine cheese had a lower proportion of saturated fats, in particular,
a reduced proportion of palmitic acid by 20% compared with cheddar
cheese."

The theme of the paper is that this chesse has the following positve
benefits:

1. Very high ALA content with low LA. This increases absorbtion

2. High amount of CLA

3. Low amounts of palmitic acid (a saturated fat)

Also, its interesting that this kind of cheese is hard to produce in
industrial environments.

The study was about the nutrition content of this cheese. It was not
looking relationships cheese consumption and heart disease.

The paper made no claims that this chesse has any advantages over a
healthy diet from other sources of ALA. No reason the think that a
handfull of walnuts would be just as good.

Increased CLA might be worth looking into.
