Susan you would appear to be contradicting yourself here. What do you
mean by the "source of fat" Surely feedlot beef isn't a good source
in your mind.

I rather think that she's pointing out that *despite* the fact that some
Atkins dieters eat feedlot meats and dairy, their lipids and glucose
profiles are *still* better than lower saturated fat, higher carb eaters.

If they were eating grass-fed meat and dairy, how much better their
lipids and glucose profiles might be, but we have yet to see those
studies.

I believe the "Swiss paradox" she references comes from a Medline
document about residents of Switzerland eating a large amount of meat
and dairy and having having good lipid results. The obvious unusual
factor being that the animals were grass fed. She's referenced this
before. In a post by Roger Zoul on April 20, 2006, Susan is quoted as
saying, "Hence the Swiss paradox; they load up on full fat dairy from
Alpine grass fed cows and have lower CVD than most countries."
