I know that there is a problem in very observant religious Jewish areas
with diabetes because of cultural and dietary norms and, along with
religious conservatism, there is food conservatism and almost making a
religion out of traditional foods like kugels, usually heavily startch
based baked and often sweet side dishes that can bar reheating for
Sabbath and holidays. there is, also often very little of a tradition of
eating green vegetables. think of a food culture formed in the cold parts
of Eastern Europe, with long winters with little vegetables. There is a
Jewish Diabetes Association that is trying to address this issue in the
very religious sector and they have put out quite a good cookbook,
Enlightened Kosher Cookery by Nechama Cohen. It is not totally low card,
but has all kinds of recipes for adapted dishes. The question is will
people use it rather than Grandma's recipe? I am on a Jewish food group
and, although we still get many traditional recipes, I do see more
"lightened" versions being sent in and more adaptations from women in
Brooklyn and other traditionally observant areas, so, slowly, the essage
is getting out. I think the problem is often greater with the men
who"just know what they like" as is common in many groups, not just
observant Jews.
These are mostly my personal observations, but I have discussed this a bit
with my retina doctor who sees many diabetic patients form this group. If
I can get into conversation with a diabetic, I will often suggest little
changes like using challah rolls instead of two large loaves to ut down on
the amount of bread sittig on the table empting poeple.
