It took me a long time to realise that fat wasn't a problem... of
course, if you're eating 3000 calories a day of fat, then you will
gain weight; but Eades reckons you get 400 extra calories a day to
play with over low carb. Personally, I enjoy spending them on cheese
and nuts.
You've also got to be sure to get in enough protein - but be aware
that some people seem to convert protein to carb more efficiently than
others, you need to keep an eye on your bg levels.
Don't forget the fibre, and the embedded water in those green leafy
vegetables (and radishes)
Wasn't it one of Quentin's lines to eat dilute food?
