I've gotten into the habit of having a small piece of dark chocolate
(about 1/4 of a Newman's Own Dark Chocolate/Orange) and a spoonful of
peanut butter. I do this probably 3-4 times a day between meals. I
probably should cut back on the PB due to the high sat fat but I loves
me the PB :-)
This, combined with ~ 1 cup of Soy + Fiber (Silk) works well for and
keeps me from snacking on the scary stuff we keep in the house for the
non-diabetics around here (especially my 8 year old son)

If you buy natural peanut butter, most of the fat is monosaturated--a type
of fat your body needs. (Some research indicates the monosaturated fats
help prevent stroke--sorry I have no cite for the article.) No need to feel
guilt there. :-)
