might I suggest photographing the position of the sun at a set time

end up with a natural analemma. Very cool.

That's a nice project, but it doesn't involve much exercise :-)

As with the solstice project, it depends entirely on where you choose
to shoot from, and you have the same problems with the weather.

The thing is I can choose to shoot an analemma from pretty much
anywhere, including some of the windows of my house, whereas there is
no choice in my solstice project, it can only be shot from one place
at one time. From any other place the alignment of sun and distant
summit cannot occur, with the possible exception of a few other high
points on that alignment, which if they exist will be a lot further
away than the one I'm using.
