In my case, my LOWEST readings are usually one hour after eating. I test upon rising, and again three hours after my evening meal (Dr's orders)... the other tests are simply my own personal tracking. It seems my gc rises during the night... my morning readings are sometimes the highest. I don't believe I spike after meals, but give me your thoughts as to when I should take readings and I'll try it for a few days.

I have to agree with Nicky on why you're getting the lowest readings. She did a beautiful job of explaining so, I won't add anything.
When I say "eating right"... here's a typical day.
Breakfast:
Egg Beaters
2 slice low carb toast with small amount of sugar free jam on one piece.
Lose the toast, and add more protein--bacon, sausage, and/or put some low carb veggies in those eggbeaters--pepper, broccoli, whatever suits your fancy.
Lunch:
Grilled chicken salad with croutons and vinaigrette dressing on the side.
Ditch the croutons.
Replace the rice with another vegetable. Rice always spikes me.
Dinner:
Grilled Pork chop or Grilled chicken or something similar
Rice, usually brown or flavored, around 1 cup.
Steamed veggies
Take gc reading 3 hours after meal, then if I snack, it's usually something like a single portion of sugar free pudding or artificially sweetened low fat yogurt.I think if you dump the starches in your diet--the bread and rice--you'll be surprised at the improvement in your numbers.

You guys are sounding more and more like you're on the Adkins plan of eating!!! LOL
My Dr. suggested that I KEEP carbs in my diet including breads etc... but you guys almost universally are telling me to drop them to minimal levels. My literature says a male should consume on average 30-45G of carbs PER MEAL (if desired)... and never more than 75g. Yet I'm hearing most of you that are trying to stay in the 10-15g range.
If you refer to the American Diabetes Assoc literature they too suggest a male have up to 45g of carbs in a meal.
Here's the question. Is 45g of carbs something you feel would be 'ok' AFTER you get within range, or do most of you find you can never eat that quantity of carbs in a given setting?
Obviously I'm going to do whatever I have to do to keep healthy and stay within range - which I have not yet accomplished, but to only have 45g of carbs in a whole day (not to mention within a meal) is TRULY ultra low carb by any stretch, and just steps away from being a true Adkins Plan.
Thoughts?
