Yes, you need to say more.
Bernstein is not the be-all and end-all of low-carb dieting, he's not even one of the major names in the field, except among diabetics.
After years on low-carb diet newsgroups, web sites and forums, it seems to me most typical Atkins dieters eat 50-100g carb/day during the weight-loss phase and go up over 100g/day during maintenance.
I love how they to make it seem like its whole grains vs. veggies when low fat already allows for more
fruits and veggies. truth is its more like
Low-fat doesn't allow for anything to put *on* the veggies though.
I wouldn't eat much salad without salad dressing or many veggies without strifrying. Even the steamed veggies I eat, like artichokes, I prefer dipped in butter.
I'd probably eat less fruit also. I really like my berries best stirred into yogurt - and I don't like low-fat yogurt.
I think the reason it winds up being high veggie is because it's in comparison to the previous diet.
If meals stay the same over-all, but you swap out starches for veggies, it winds up a higher-veggie diet. If I use stirfired cabbage instead of noodles under my stroganoff, that greatly increases my veggie intake. Same with using stir-fried zucchini under chicken parmesan instead of pasta. Or more veggies in the stirfry instead of serving it over rice.
*Practically* speaking, my diet changes by the replacement of starches with veggies. And I am certainly not saying that is the case for every low-carb dieter, but it is the case for me.
Whole Grains + alot of fruits + a lot of veggies VS FAT and proteins.
this is why I distrust anyone that tries to make it seem like its whole grains vs. veggies.
yes I do know that there are also those that just never looked into low fat.
and yet even tho low carb allows for a lesser amount of fruits and veggies - i have nothing against
those that choose it as long as they know the truth and later tell the truth.
Actually, the Yudkins study showed that people on a low-carb diet ate about the same amount of protein and *less* fat than before the diet began, even when instructed to eat all the meat, butter, cream and cheese that they wanted.

That is certainly no proof that they ate more veggies, as this particular study didn't seem to track that.
But it does prove that when you tell people to eat all the bacon cheeseburgers they want as long as they throw out the bun, they don't eat any more protein and the fat content of their diet goes down.
