about the cholesterol.

There's a lot of evidence that blood cholesterol raises much more with
carbohydrate intake than with dietary cholesterol intake.

I saw this myself when I was hospitalized. Two days after my bg was
controlled, both my triglycerides and LDL were cut in HALF. That's
pretty darned significant evidence to me.

I tried an experiment this morning. I drove my wife to work this
morning, and usually, when I drive her, I stop at an eatery near her
office and have their steak & egg special. Since being diagnosed, I
haven't gone back there, but decided to try it this morning.

I ordered the special, which normally consists of 3 eggs, a 6 oz
steak, a large (possibly 2 servings) of hash browns, and 2 slices of
toast. I told the waitress I didn't want the potatoes, and asked for
whole wheat toast. When my order arrived, I the waitress mentioned
that some tomato slices had been substituted for the potatoes.

After 2.5 hours (I didn't have my meter with me), my BG was 6.1, which
pleases me a lot. Normally, after a breakfast like this, I would skip
lunch, but today, I think I'll have at least a snack, probably 3 or 4
"stoned wheat thins" with some sharp cheddar, hoping to avoid a dip in
BG.
