Re: Carbs: How Little is too Little?

its important to realize that serving size and portion size are 2 different things.
a diabetic meal plan based on the food pyramid lists a serving of fat
as 45 calories portion size will be different.
while I am aware that your 900 calorie count on fat also includes fats from meats.
a serving of roast beef is about 2 oz but the portion will be different.
so i am willing to bet that you also have a high number of servings of meat

I consider meat, eggs, and dairy products and such to be the same category - protein sources. That's how it fits in my diet, I have a big bunch of veggies and some protein at each meal.

Most often, I have fullfat Greek yogurt or cottage cheese as my protein. This is laziness on my part; I don't take the time to cook for every meal; it's a lot faster to stir some berries into yogurt than to cook. I try not to have the yogurt more often than once a day as it's relatively low-protein compared to most protein sources. I buy fullfat dairy products, so it's a lot fattier than most meat sources; a cup of FAGE yogurt has 23g fat whereas a chicken breast with skin has 8g.

A few times a week I have eggs, I eat around a half dozen a week. I eat around 1-2 lbs of meat per week. I eat around a half pound of cheese each week - mostly mozzarella and cheddar. But I eat several large containers of yogurt and cottage cheese each week - that's most of my protein. I eat a cup at a time, which is considered 2 servings according to the package.

Your example of 2 oz roast beef... yes, if I were having roast beef as my protein, it'd be likely 2 servings. 4oz is a typical amount for meat for me cause it comes in 1 lb packages and is easy to split into 4 servings. So yeah, my servings of protein run around 6 per day as it's 2 serves per meal.

The "serving size" for veggies is very small, IMO. I don't eat the 5 recommended, but more like 10, some days up to 15. And usually a couple servings of fruit each day also.

I am pretty certain about what I eat right now cause my husband is on the road driving and I'm at home. So... when I grocery shop, what I buy is what I eat.

in a day
and probably placed a little above fat in your diet.
when you choose non lean meats you count that also as servings of fat.
how many servings would be any fat in the meat over a serving size.
at 45 calories per serving divided by 900 = 20 servings.

I don't think I get most of my fat with protein, but as flavor-enhancers for veggies. Olive oil to marinate veggies in. Salad dressing and sunflower seeds on top of salads. Melted butter to dip artichokes in. Oils to fry peppers, onions and garlic in. Mozzarella melted into mashed eggplant mixed with olive oil. Cream cheese mixed with mashed cauliflower. I make my own concentrated broths and do not skim off the fat and use it to steam/saute veggies in - or as a base for veggie soups. Stuff like that.

I also get a few hundred calories of fat from a bark I make: I melt 1/4 cup of coconut oil and mix in 1 TB of cocoa and a TB of a sugar-free DaVinci syrup and freeze to solidify to make 2 portions. Since it's almost all fat with hardly any carb or protein, it makes a good between-meal snack as I don't need to take insulin with it. I probably eat a serving most days. It's a lot better than sugar-free jello, which is the only other snack I've found I don't have to inject for and I hate the stuff.
