Chuck, what you have in the cupboard is either wine vinegar
or just spoiled wine. It may be acceptable to you in a
marinade or as part of a cooked recipe but it's taste would
be sour and very "off" for drinking.

After sending that, it occurred to me that you may have
"fortified" or dessert wines, such as madeira, sherry, port
or similar. In that case they will keep for a considerable
time. They will also have very high sugar levels.

You will probably find this laughable but we don't buy any wine that
has a cork in the bottle. If it doesn't have a screw top, we don't
want it because it won't keep. LOL I thought you'd like that.

Chuck, I got a couple of the half-bottle screw caps (375 ml). One was
from a wedding, the other was at an anniversary. Both had labels printed
for the occasion by the winery. Some wines are sold by the half-bottle,
and I have seen 4 or 6 paks of 200 ml bottles.

Drink the wine. Clean the bottles. When you buy a full bottle, simply
fill 2 half-bottles, put the screw caps on, and drink at your leisure.
If you aren't going to drink reds within a day or two, refrigerate the
bottle, and take it out beforehand. You are usually going to refrigerate
the whites anyways. The trick is to reduce the amount of air in the
bottle. Just re-wash the bottles and rinse well. That way, enjoy what
ever wine you want.

Chuck is teetotal Dennis and only uses his wine for cooking.
Considering the quality of his wine, I would do the same. If
I drank his wine I might also decide to become teetotal:-)
