works partly by slowing gastric emptying but more importantly acts
like insulin; triggers cells to increase glucose uptake, increases
synthesis of glycogen, actually increases insulin sensitivity over
time, lowers fasting Bg and insulin levels, lowers total cholesterol
without lowering HDL ie lowers LDL and triglycerides. Had to find out
if all this is true. So the home lab rat:
Starting from fasting in morning consumed a test meal of 1 1/8 cups
packed of cooked white rice.
There will be variable amounts of air in packing food for volumetric
measurements.
Weight measures are simply more accurate and repeatable in this
setting.
This is why recipes with instructions given in weights rather than
volumes give results that can be replicated.
