Have you tried rebottling the remainder in a smaller bottle, such as a
half bottle? Then there's the collapsible bottles favoured by some,
and the vacuum pumps favoured by others. The general idea is to reduce
the wine's access to oxygen. All popular with solitary and
parsimonious Scottish wine drinkers :-)

We do not drink anything with alcohol in it. However, once in a great
while we fix a recipe that calls for wine in the marinade or in the
cooking. Either way the alcohol is cooked out of it. We have two or
three part bottles of different kinds of wine that have been in our
cupboard for months or even years and they work just as well as they
did the day each one was opened. So what is the fuss about using a
bottle up within a short time?
