She is a picky eater..lol..course for years i refused to eat sandwhiches
whole id eat the bread meat and anything like chees and lettace
seperate..took me till like my 30's to enjoy the thing as a whole..lol.
Your recipes sound great i use to eat alot of pollock fish as its a nice
firm non "fishy" fish..cod here in minnesotas a bit too expensive sadly.
I used to make a quick stir fry breakfast of rice and scrambled eggs with
different things like curry poweder mixed in it etc...i could do the same
with lentils i pre cook..
i love having choices!
I think most newly dx people think they cant have good food as
diabetics..glad thats not true at all!

I saute about a half-cup of that in a 5" cast-iron skillet
in olive oil. While it's softening I whisk one egg lightly
with a spoonful of water and a sprinkling of turmeric,
pepper and nutmeg. Then I pour that over the veges and
sprinkle some grated mozzarella or cheddar on top and put it
under the griller(broiler). It's ready when the cheese
browns and bubbles.
Sometimes I add a little canned tuna or salmon; when I do I
also add some thai fish sauce to the egg mix or some
anchovies to the veges. Another variant is some chopped
bacon, pre-cooked as you did, or a chopped slice of salami
pre-cooked; using the fat in both cases as an alternative to
the olive oil so just adding the veges when the meat is
ready.

After a quick good brekky? This was mine this morning. After
putting the coffee on the gas I put some water in the bottom
section of the steamer saucepan and put it on the gas. While
it was getting hot I wiped the inside of a cup with butter,
cracked an egg into it, and put it in the top "steamer"
section. I added a piece of frozen smoked cod straight from
the freezer beside it, put the lid on and went and had my
shower.
When I came back all clean and dressed after all the sh's
(shower, shave, shampoo, sh - you know) there was a
perfectly "poached" egg in the cup and some nicely cooked
fish beside it, ready to be eaten. And coffee in the pot.
And not a carb in sight.
