Julie,
My immediate reaction to your post was the same as Oxgirl--it sounds
like previously you migh tnot have been getting enough carbs to
prevent your liver from getting into the action. But as Alan points,
your circumstances may be a bit unusual, so there could be other
factors involved.

Okay I just don't get this. I had to change my diet once again because it
did seem as though my stomach (supposed gastroparesis) was indeed retaining
food. At first I totally cut out the salads and raw vegetables, limiting
myself to small amounts of cooked vegetables. I began eating mainly white
rice, the insides of potatoes, rice pasta, crackers, pretzels, and now
sourdough bread. Finally found some I am not allergic to! Cut out the nuts
and seeds totally and limited protein to small amounts of chicken and tuna.
Very little fat. Did this for a few days, then added in a few foods like
ground beef and more cooked vegetables. This sort of diet while boring, did
at least seem to be passing through my system. I lost another 5 pounds and
it stayed gone.
So after doing this for a few weeks, I added back in occasional small salads
(usually when dining out) and small amounts of raw vegetables. I also added
popcorn back in and occasional nuts and seeds. Also added back the coconut
oil and a bit of olive oil. And occasionally dried beans. So now I am
eating less fiber than before but more carbs! And my numbers have been
better than they were in a long time. Most of the time I am running between
80 and 110. I've had a few numbers as high as 140 and a few more hypos than
that. So I am having to test more frequently. Best of all my stomach feels
so much smoother and flatter.
What I don't understand is the lower numbers. I am surmising that in eating
the lower carb, higher fiber foods like salads, the food was just sitting in
my stomach and I wasn't metabolizing it. This was somehow leading to
higher BG. Now that I am eating mainly easy to digest foods, the bulk of
what I am eating *is* being metabolized like it should so my numbers are
more normal. Could this be why low carb doesn't work for me? Recently in
getting over a stomach virus I ate two cups of white rice at one time. I
felt like I was starving after having not been able to eat for a couple of
days. I figured I'd have high BG but didn't care because I was tired of
feeling so sick and weak and also felt starved. Yet I tested at 110 at two
hours after eating. Gah!
I should add that one reason my diet now seems so limited is that I also
have food allergies so some of the things that would be allowed on a
gastroparesis diet are things I can't eat. Like eggs and low fat dairy.
And I don't know how long I will last on this type of diet. While I am
feeling better in some ways I am certainly missing my favorite foods. Raw
veggies!
