I've been puzzling over the ADA's love of bread. Granted, when the ADA
site states whole grains, there is no doubt that would be an
improvement over white bread. However, what do they think is going to
happen if bread is eliminated? I haven't had any bread since Nov 2005.
I do eat low carb tortillas and Rye-crisp crackers in small amounts,
but that's about it for grains. However, my vegetable, fruit, and nut
intake is up, and if anything I believe I'm getting more fiber from the
way I eat now than I did before. Breads are not any higher in fiber
than dried beans, berries, broccoli, lentils, or peas. Some of the
other fruits and veggies are slightly less, however, since my diet is
composed largely of veggies, and fruit (in moderation), I'm getting a
lot of fiber for a lot less calories. So, I return to the question,
what's so darn great about bread? So darn great that the ADA suggests
increasing your meds in order to consume it?
I spy profits.
Wheat is worth a lot less to the farmer than it was, over here it's
about half the value it was ten or more years ago.
The food processing industry must therefore be making an ever
increasing mark-up, not just on bread but everything else which has
wheat stuffed into it, buy cheap, sell expensive.
I'm following a discussion elsewhere about the likely future of crop
prices as more and more wheat and corn (and probably sugar cane and
beet, and definitely canola/rape) is diverted from the food market to
the energy market.
This factor rather than medical/dietary reasons, may shift the ADA
(and DUK) position on high-carb diets, sooner rather than later.
