Wow Julie, that is a tough situation you are in. It must be hard to be
such a knowledgeable cook who can't enjoy the delicious receipes you
fix for your family. I would be very frustrated too!
The only thing I could think of was that maybe your egg allergy is just
to the white of the egg, which I *think* is the most common allergy.
So maybe you could still tolerate egg yolk, which I believe is still a
good protein source? But maybe your allergy is to both, so that might
not be an option.
The other thing I thought of was that if you could control your BG with
insulin or a fast acting med, that would allow you to eat foods that
you do enjoy that have protein but that you have to avoid or limit so
as not to spike your BG? So, you could have potatoes or yams or rice,
etc. if you enjoy and tolerate those, and could take control of your BG
with the med. Is that something you might consider or that your endo
might help you with?
