Bread can hit some people pretty quickly. Pasta takes longer for some; not
so for others. I mostly can't eat bread except for low carb varieties like
whole wheat with 9g carb per slice. Pasta I can eat with strict portion
control. When I started, I didn't limit my testing to once per meal, but
tried to find the spike. Some one here has suggested 90 min after the end as
a good starting point. I tested from the start (first bite of anything) and
from the last bite and at various times after the meal to find when
particular types of meals were hitting my blood. Your suggestion seems
reasonable to me for a starting point to begin learning how your body is
handling the meal. But what I want to know is how high is the meal taking
me, the peak point, and how quickly does it go down to premeal levels. That
might mean 3 or 4 tests, without being obsessive about it.
