Removing fat from my diet essentially establishing a low fat diet
means just that. It doesn't mean establishing an ultra fat diet or a
no fat diet. Low fat as commonly used means 25 to 30% calories by fat.
Put simply the first part of my strategy was to eat less fat by
removing obvious sources of saturated and trans fats.

Who might "they" be?

The ADA expert opinion has been for 60% of calories from carbohydrate
and monounsaturated fats. For people who have a low triglyceride
level, getting most of that 60% from carbohydrate will work though
triglycerides will increase unless the diet and exercise results in
weightloss. One characteristic of many T2 diabetics is an abnormality
in blood lipids, in particular high triglycerides and low HDL. For
this reason, if no other, the other option implicit in the ADA expert
opinion ie restricting carbohydrates and making up some calories
previously allocated to carbohydrate with monounsaturated fats, makes
sense.

Eating less is generally a good strategy for people wishing to lose
weight.
