Good low carb for breakfast - well you can either try low carb or low GI. You may be able to manage with low GI foods in which case you will have more options. Things like Rye breads have a significantly lower GI and may hit your BG less quickly so that you can get away with them.
The most frequent thing I eat for breakfast is eggs of some description. Usually an omelette with a little diced ham and onion and cheese. Doesn't hit me too hard.
Part 2:
The BG rise during the night. This is generally known as the dawn phenomenon and is pretty common although the degree to which it is a problem varies. The liver dumps glucose into the bloodstream just before you wake up to give you a kickstart - so that you have the energy to go hunting dinosaurs or whatever!
No doubt you'll get a lot of suggestions on dealing with it so I will just post a couple:
1) Eat a small amount of low GI food before bed. I tend to have a couple of oatcakes with cheese or peanut butter. Effectiveness varies, but the first time I tried it, my fasting BG dropped from 5.5 the previous day to 4.2. Works for me but your result may vary.
2) Red wine or other low carb alcohol before bed.
3) If you are on metformin you may find slightly better results from moving our last pill of the day to taking it along with a pre-bed snack.
