Every time you eat Orange Beef or Iron Steak in a Chinese restaurant, you're eating meat that's been tenderized by marinating in a semi-caustic alkaloid that has had to be washed off. All it is is meat tenderizer, in this case applied to previously dried fish.

I know at least one Alaskan family that serves fresh cod the same way, with the melted butter and mustard, the potato lefse/lompe, etc. It may be that real lutefisk is harder to come by there than in Minnesota.

Word on the street is that there's an old retired Scadinavian sailor's mafia in Bay Ridge where you can get the weird cheeses that look like laundry soap, lutefisk, all that stuff. Maybe even haakarl and surstroming (both of which make lutefisk pale into mundane insignificance by comparison), if you ask nicely. It's kind of like Kearney, NJ, where all the butcher shops sell haggis (which is also good, BTW).
