Iberian ham is from pigs that have been fed exclusively with acorns and herbs, there are cheaper versions like recebo that have commercial feeds in the last couple of weeks.
For a cheaper version you can always get a front leg slice called paletilla.
The hams are generally dry cured and any decent place will have a huge selection hanging on the back wall with prices around €20-100/kg


I wish you the best with the new restaurant. I'm always thrilled to
hear about new jazz venues and I am sure that it will do well
considering your reputation as a chef. Will you be serving your famous
chili? You could name it after Toots Thielemans.

I do not know about chili as it is expensive to make well, and although there are only a couple of places in town that do it well, I am not sure that it is a big draw.
