If you want to learn quickly or are new, use the camera B/W mode.
Instant feedback, develop your B/W eye.

If you want to learn about other B/W conversion options (usually
later on): Colour and lots of trying with your image editor until
you learn to find settings you like.

Best of both worlds: shoot RAW + JPEG in B/W mode --- the RAW
contains the colours and allows you to post-process as you like.
Unfortunately most cheap cameras don't support that.
