I do not own a DSLR yet but It would be good to know what models have a
B&W mode simply for the reason of speeding up the camera and conserving
storage.
As for quality I think it might be best to capture the images in color
and do the filtering in post production via Photoshop. This would leave you
with all of the color in tact and you could then play with different
filtering to see what the image looks like with an orange filter or blue
etc. etc.
The are allot of really great techniques and filter that do excellent
B&W conversion
here are a handful of mine.. Scanned with Minolta dual scan IV and
converted to B&W with multiple techniques.
