There really is no such thing as text mode. Just type and when you save
the file you select .txt from the drop down tab. You can then select the
format.

If you have auto save turned on and you didn't start by saving the file
first thing as a text file, then Word has been saving it all along as a
..doc file. When it does that, it is creating and saving the formatting of
a .doc document. The dialog is just warning you that you will lose that
formatting by saving it as a .txt file. It won't hurt your data and
you'll lose nothing. After opening Word save your new file as a .txt
first thing. That way if you lose power or the computer crashes you will
be able to find and recover your file.

File handling? Just open the file and type. Well save it first, then
type.

It's also very easy to create a template. Type what you want to use as a
template and save it as a *.dot, then next time select <New>, then pick
your template from where you saved it. Usually <General Templates>.
You could also include a macro in your template that prompts you to save
as a .txt file first thing.
