No real need in my case BB.
They are already split into two separate ones. One for graphic pages
and the other for text based pages. (And they are also in categories)

Last time I did a check, there were over 500,000 internal links as
there is and you can reach every page within 3 clicks (may be the odd
one that needs 4)

If I were to split mine any further, then they will be clicking
through the site map and not via the site - which would probably be
easier (and less clicks) anyway.

A site-map is there to help visitors who get lost, visitors that want a quick overview of what they can find where.

How on earth do you think a visitor can scan 2000 or even 1000 links if they are in 1 site-map / document?

Splitting them up in categories would be the best. A good example (not a perfect one) is DMOZ. Each main categorie has its sub-categories etc.

That way, even if a visitor has to click more than 2 times to find the information he wants, he will follow them.
