hole to access the interior of the oven.
When I responded, I was thinking of the sort of oven
thermometer that can just stand up on the floor of the oven.
I've seen lots of those, but none in the range of
temperature I need.

I may have a possibility...
There are bi-metallic thermometers that are typically used
on flue pipes on wood stoves.
They read to 900F, are cheap, and (I believe) could go into
the oven with no trouble.
