The other option is to convert them into left handed pickups by
swapping the positions of the pole pieces so that they have a left
handed configuration.
Trying to move the pole pieces in a pickup with fibre endplates might isn't
a good idea unless you know something about the construction of the pickup.
I don't know how recent ones are made, but traditional ones have the wire
wound directly onto the magnet slugs, and trying to move them breaks the
wire. I've wrecked a couple like that. It works fine an plastic bobbin
pickups, but I guess that the MIM Fender use the traditional type
A good solution IMO is to use flat pole pickups or the type with the two
centre pole raised slightly. Vintage stagger, which is asymmetrical, is no
good anyway with a plain 3rd string.
