I am quite confused about chords key ...ect

if i were to play in the key of C. Could i use all of the chords in the
scale C D E F G A B ?
and could i play them with 7ths ...ect?

You have C / F / G (Major Chords)

and

Am / Dm / Em (Minor Chords)

Try these and inversions of these to get you started,
