You'd wind up about the same within an inch or two in either direction,
since the pickup leads would to to the switch rather than the pots. The
neck pickup lead would be significantly shorter, the bridge slightly longer.
The lead from the switch to the output jack would just be interrupted at the
pot. IIRC, the stock wiring sends the leads to the pots, then out to the
switch, then back out to the jack. So, the modification could remove about
eight or more inches of wire, if that matters - you'd have comparable
losses with longer cords to the amp.

That could induce some loading and/or coupling effects.

If it works for you, that's fine. Personally, I prefer to use all the
pots. But that's not a value judgement.
