I'm learning some chords on the guitar, and there are a few that I particularly like the sound of:
the dominant 7th with a suspended 4th,
the minor seventh chord,
and the dominant seventh with a sharped 9th.
Do you have any favorite chords? or chord progressions?

Take any regular cowboy chord I IV V song and change the I to a Maj7. Hell, change the IV to a Maj7 too. Suddenly you're Steely Dan.
I like Maj7s.
~m7b5s are groovy too. Play Maj7s and m7b5s up and down the neck, and you might find that you can play chord melodies. I just tried it with Jingle Bells to make sure I wasn't completely full of it. Start with a Dmaj7 and you'll be grooving in no time.
DMaj7: x 5 7 6 7 x (Or x 5 7 6 7 0 for that "I am a genius jazz guy" flavor.)
Next chord (F#m7b5): x 9 10 9 10 x
These shapes are pretty easy to move around. You don't have to lift your fingers off the strings. With the above as a kick start, I think anyone should easily be able to find melodies they can play.
