OK, since no one else has given you a serious response yet, I'll give it
a try.
The normal names for these pickups, in the order you mentioned, are
neck, middle, and bridge.
If the switch is wired like a Stratocaster switch, the positions
correspond to the following:
Position 1, most toward the guitar's bridge: Bridge pickup only
Position 2, bridge and middle pickups
Position 3, middle pickup only
Position 4, middle and neck pickups
Position 5, neck pickup only

As for which one to use, it's entirely up to you. Experiment! In time
you'll remember what the guitar's sounds are for each of the different
positions, and you can choose whichever one sounds most pleasing to you
for a given song.
