I consider myself an intermediate player, and one of the two most valuable
learning tools for me is a sound editing program - I use Cool Edit Pro -
where I can dissect a recording into ting pieces, including slowing down and
loops. I'm not aiming to learn the piece note by note, but get an insight
into how the player is getting what he gets.
The other major learning tool is playing in a band, getting the teamwork
right.
Both are pretty much in line with what you are advocating.

Before the internet and downloading tab everyone who wanted to learn
songs either did it by listening to or by reading the music.
Sometimes both.
There wasn't that much of people playing songs differently than as
written or as recorded.
Most people who 'do their own thing' with songs these days do it
because thay can't 'play it right'.
The reason they can't 'play it right' is either because they are not
capable of using ear training or they can't read music.
Of course there are exceptions where people will rewrite a song but
usually they learn to 'play it right' first.
I know that there are people who will disagree with this but can they
play it as written or as recorded?

You are talking like a bass player.
I love jazz improv.
