I always play Em7 022030 like Nil suggests. So there's no need to skip
a string.

But there are times when I DO want to leave out strings when strumming.
For example, that bottom E string just doesn't sound good when I'm
strumming an open C. So I mute it. I fret the bass C note with my
ring finger and push it towards the E string just enough to touch it
and keep it from vibrating.
