It's sometimes called a "false harmonic". You do it by attacking the
string near the bridge with a combination of the pick and the side
of the thumb that's holding the pick. Pick near the bridge - you
may have to play around to find the spot where the harmonic jumps out
loudest. Easiest with high gain/distortion. Billy Gibbons of ZZ Top
has practically made a career out of this technique.

I am very grateful for your perfect explanation of how to achieve the
pinched harmonic sound.
I have just messed around and followed your instructions and its working
great. I have had this happen to me a few times when unwanted. Now I know
how to correct it, more importantly I know how to make it happen at will.
