I was under the assumption that when a band is hired to play a gig the
establishment owner is responsible for any insurance claims.

Not quite. Remember that liability for harm you cause and insurance to cover that liability are two separate things. The venue's insurance will cover liabilities that arise from the venue's negligence, and it will not cover liabilities that arise from the band's negligence. Whenever there's an injury caused by negligence, and there's insurance involved, the first thing that happens is the insurance companies scramble to find reasons they shouldn't have to pay, and pinning the blame on another party is a usual approach. I.e., if the injury was in any way a result of anything the band did, the venue's insurance won't help.
