The difference is the note that defines the tonality. If it were the
key of G major in conventional tonal music, the song would feel most
resolved and at rest during a G chord, and all the harmony revolves
around getting back to G. The G note defines that key, "major"
describes the flavor.

Similarly, modal music is defined by the note and/or chord that feels
most resolved and at rest. In the case of A Dorian, that note is A and
the chord is Amin. "Dorian" describes the flavor of that mode.
