I know a guy whose whole band is ampless and goes directly through the
soundboard and in ear monitors. Even the drums are electronic! This is
kind of scary to rely so much on the engineer. Call me old fashioned,
but I
still like using amps and accoustic drums.

I am with you on that one from here on out!
Next time I get offered a gig at that club, I have two options:

1) turn down the gig - because the resident soundguy has a different
(and prevailing) opinion of how my music should sound to the audience
(and his opionion is incorrect, I might add).

2) take the gig, use my amp to control volume for the audience as well
as myself.

The second seems like the only reasonable option to me.
On the other hand, there are other clubs with sound system where the
soundguy makes it sound awesome everytime.

How about (3) bring your own sound guy? If you're using the house PA,
introduce your sound guy to the club sound guy and politely explain that
your guy knows how the your band should sound and will be advising the club
sound guy when necessary.
