From what I understand, the Squier Affinity P bass is a split coil
pickup. I read on a website that if a guitar has two single coil
pickups, it can cancel out the hum, but it didn't mention anything
about a split coil doing the same thing. Anyone know more about this?

a split coil will do the same thing. One of the two "halves" is in reverse polarity to the other. As I understand it, as long as one of the pair/pickups is revese polarized with regard to the other you'll get hum canceling. I always thought that was the reasoning behind the original Pbass setup. Basicaly a humbucker is two single coils mounted side by side in reverse polarity. The Jazz setup is sort of this way except the two coils are separated by 3-4" and thus cuts down on the effectiveness of the hum cancelation. I think it's also affected by whether or not the pickups are sending a similar strength signal....
