I'm SURE you meant OUTPUT transformer center tap which better had NOT be
grounded.
Although it is possible to bias by total current draw through the amp,
it's crude at best. (I remember some amp in my past where it was
recommended by the mfr to adjust bias by hooking an ammeter across the
open standby switch.)
